Black Bean and Tomato Tapenade (for Soy Marinated Sablefish)

This is used in the Soy Marinated Sablefish recipe.

INGREDIENTS

cup (60 ml)
chicken stock

tbsp (20 ml)
vegetable oil

tbsp (30 ml)
tomato, finely diced

tsp (0 ml)
sambal oelek (prepared chili sauce made with red chilies, salt and lime. It's available at Asian specialty grocery stores.)

tbsp (30 ml)
light, low-sodium soy sauce
1/2
tsp (0 ml)
garlic, chopped
1/2
tsp (0 ml)
fresh ginger, grated

tbsp (50 ml)
fermented black beans (or douchi, is available in Asian specialty grocery stores)

tbsp (30 ml)
cooking wine

tbsp (30 ml)
white onion, finely diced

DIRECTIONS

  1. In a small fry pan, heat vegetable oil. Add onions, garlic, ginger and black beans. Deglaze with cooking wine then add in all other ingredients except tomato.Cook till the mixture is almost dry. Once cooled, add in diced tomato.
